Apples make for the perfect fall treats. The Leaf staff tested recipes from all across the web and we ultimately decided that these apple cookies and cake are by far the best treats for this fall season. The delicious spices incorporated into the cookies produce warmth and comfort that perfectly complement the apples, creating that “fall feeling.” The cinnamon sugar topping on the cake is a perfectly sweet addition to an already delicious treat. But better than all, these recipes are quick and simple!
Apple Walnut Oatmeal Cookies
Ingredients:
1 1/2 cups (150 grams) old-fashioned rolled oats
1 2/3 cups (212 grams) all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon fine salt
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
4 tablespoons (57 grams) unsalted butter, melted
3/4 cup (150 grams) packed light-brown sugar
1/2 cup (100 grams) granulated sugar
1 large egg plus 1 egg yolk
1/2 cup (118 ml) applesauce
1 cup (100 grams) peeled and chopped Granny Smith apple
3/4 cup (90 grams) chopped California walnuts
For the glaze:
3/4 cup (94 grams) powdered sugar
1 to 2 tablespoons pure maple syrup
1 tablespoon apple juice or water
Instructions:
Preheat the oven to 350°F and line two baking sheets with parchment paper. Then, mix all of the dry ingredients in a medium-sized bowl. Next, in a large bowl, mix the wet ingredients. After the wet and dry ingredients are completely incorporated, gradually stir in the apples and walnuts. Then, drop 1 1/2 tablespoon-sized balls of dough onto the baking sheets, spacing 2 inches apart. Finally, bake the cookies for 13-15 minutes and let them cool completely on the baking sheets before adding the glaze.
To make the glaze:
Whisk together all of the ingredients until a thick but pourable glaze forms.
Cinnamon Sugar Apple Cake
Ingredients:
1 1/2 cups brown sugar
1/3 cup oil
1 egg
1 cup buttermilk or (1 cup milk + 1 tablespoon white vinegar)
1 teaspoon vanilla
1 teaspoon baking soda
2 1/2 cups flour
2 1/2 cups chopped Honeycrisp apples
Cinnamon Sugar Topping:
1/2 cup sugar
1 teaspoon cinnamon
1 tablespoon butter, melted
Instructions:
Begin by preheating the oven to 325°F. Then, mix the wet ingredients in a large bowl. Next, mix in the dry ingredients until just combined. After that, fold in the apples. Pour the batter into a 9×13 pan lined with parchment paper. Then, combine the ingredients for the topping and spread it evenly over the batter. Lastly, bake the cake for 45 minutes. Serve warm with vanilla ice cream if you want (it’s so good).
