Simple, at home vegan mug cake

Students once again find themselves back at school after two weeks of bliss and relaxation. The return to schools means homework and responsibilities, all of which can contribute to stress.
But what’s a better cure for a night of studying than cake? Not just cake, but cake in a cute mug made from simple and everyday ingredients.
This mug cake not only satisfies sweet cravings but also comes together in less than five minutes. It requires very little technique or experience, both things that make this treat the perfect midnight pick me up.
The best thing about this recipe is that it’s vegan and also extremely customizable. One can swap out a tablespoon of flour for unsweetened cocoa powder to add a chocolatey twist or even add chopped nuts.
While the cake has a subtle and mild sweetness by itself, it can be heightened with fresh fruit or ice cream. My favorite toppings include banana slices and peanut butter, the classic salty and sweet combo.
Ingredients:
1-2 Tsp. Melted Coconut Oil
¼ Tsp. Vanilla Extract
3 Tbsp. Non-dairy milk
½ Tsp Apple Cider Vinegar
1 Tbsp. Sugar
A Pinch of Salt
¼ Tsp. Baking Powder
3 Tbsp. All-purpose Flour
1 Microwaveable Mug
Directions:
Simply mix all ingredients together inside the mug and microwave for approximately one to one and a half minutes.
NOTE- If the mixture is a little clumpy, add a little more plant milk until it reaches a creamy consistency.
