Breakfast Cupcakes

My family takes the saying ‘a vegetable each meal,’ quite seriously, and a quick and easy way to get some vegetables in during breakfast is using spinach. Spinach is a quick leafy green that is easy to cook and can be used with most morning meals. So I present to you my healthy breakfast cupcakes.

What you will need:

Five eggs

½ cup of fresh, chopped spinach leaves

¼ cup Bacon or any breakfast meat

¼ shredded cheese

A splash of milk (A splash of milk makes most things nice and fluffy)

Salt (optional; if you use the meat then don’t use salt and vice versa)

Pepper to taste

Cupcake tins

Butter

How to prepare:

  • Preheat oven to 400 degrees, and cook any meats beforehand.
  • Crack the five eggs into a medium bowl and add chopped spinach, meat, cheese, milk and pepper.
  • Stir together, butter tins and then slowly pour until the mixture reaches about ¾ high in each tin.
  • Put into the oven and bake for 10-12 minutes, checking halfway to make sure mixture doesn’t boil over.
  • When done serve with a side of fruit and milk to complete the meal.
