Chicken Lombardy

This is a sophisticated dish that you would take the time to make on a warm Saturday night and drink some wine with (of course if you’re old enough that is).

Ingredients:

8 chicken breast halves

1⁄2 cup flour

1⁄2 cup butter

1 cup sliced mushrooms

1⁄2 cup Marsala wine (it cooks off though you must be 21+ to buy it)

1⁄3 cup chicken broth

1⁄2 cup mozzarella cheese

1⁄2 cup grated parmesan cheese

3 cups of your choice pasta or rice

Instructions:

  • Preheat oven to 400 degrees. Place pieces of chicken on a cutting board and use a rolling pin to flatten.
  • Cover the chicken very lightly in flour then cook in a pan with melted butter. Cook until almost thoroughly cooked through and lay on the bottom of the baking dish.
  • Sauté mushrooms in a pan then layer on top of the chicken (see picture above).
  • Cook the wine and chicken broth in a pan until thickened then spoon over the chicken and mushroom layers.
  • Bake for ten minutes.
  • Sprinkle cheeses over the layers then put in for an additional five minutes.
  • Enjoy with pasta or rice.
